The Hero Ingredient

The lemons are rescued from our friends at Pressed Earth, a company that produces and supplies fresh-pressed citrus juices for Perth's independent grocery stores, bars and restaurants. Each morning, they juice piles of lemons, leaving behind perfectly fragrant husks that would otherwise be destined for the bin. We scoot on over and collect them within 24 hours of juicing, while all those beautiful lemon oils are still fresh and punchy, then put them straight to work making limoncello. Turns out there’s plenty of life left in a lemon after the juice is gone.

How we made it

Limoncello sounds pretty simple: lemons, booze and sugar. And, well, it kind of is - which means there’s nowhere for average lemons to hide. We start with freshly juiced lemon husks rescued from our friends at Pressed Earth and get to them while all those beautiful aromatic oils are still packed into the peel.

Rather than leaving the husks soaking for days, weeks or even months, we use a much higher-than-usual load of lemons and keep the extraction short. That lets us pull out loads of bright, fresh lemon zest and fragrant citrus oils, without dragging out the pithy bitterness you might expect from using the whole husk.

Once it’s properly lemony, we blend it with sugar and reverse osmosis water to bring everything into balance, give it a thorough mix for a soft, silky texture, gently filter it and leave it to rest. The result is bright, rich and unapologetically lemony - all the zest, none of the pith.

  • Recovering Neutral-Grape Based Spirit

    Our neutral spirit starts life in the Barossa Valley, where it’s made from grape pomace — the skins and pulp left behind after winemaking. Rather than letting all that good grape material go to waste, it’s distilled to a very high purity of around 96%, creating a beautifully clean base spirit. We then take things a step further at the distillery. Clean tails from our gin and Triple Sec distillations are collected, combined and rectified again, stripping them back to a clean, high-strength spirit instead of discarding them. That recovered spirit is then put back to work alongside our grape spirit as the base for products like our Limoncello. Because if there’s still perfectly good spirit in there, we’d much rather use it than waste it.

Zest it, or spritz it

Bright, zesty and ridiculously refreshing. Our Limoncello Spritz combines vibrant lemon, bubbles and a splash of soda for a crisp, sun-soaked spritz that goes down far too easily.

  • 60ml Limoncello Liqueur
  • 90ml Prosecco
  • 30ml Soda Water


Add the three ingredients to an empty wine glass, top with cubed ice and garnish with a slice of lemon.
