We rescued WA-grown Yuzu husks destined for waste and turned them into this unapologetically zesty aperitivo. Best enjoyed long, cold, and with friends.

Note: A little floating white oil ring in the bottle is normal and maximises flavour - no harsh filtration techniques used here! Give it a little shake to dissolve back into the liquid. Yum!
Smell: Bright yuzu peel bursts from the glass, layered with fresh citrus oils and a subtle lift of jasmine.
Taste: Juicy, zesty citrus up front with balanced sweetness, followed by gentle herbal bitterness from cinchona bark and a clean, dry finish that keeps it refreshing.

The Hero Ingredient
The star of the show is rescued WA-grown yuzu husks from WA Yuzu Farm in Donnybrook. Each year, farmer Jeremy sends his “lowest grade” fruit off to be juiced for bars, restaurants and shops around Perth - and that’s where we swoop in and grab the husks before they’re forgotten about.
Yuzu is a Japanese citrus prized for its intensely aromatic peel, sitting somewhere between lemon, mandarin and grapefruit. We collect the husks and get to work to lock in those bright, volatile oils. Through a mix of maceration and distillation, we pull out both the round, juicy notes and the sharper, zesty aromatics, turning what was once waste into the backbone of the spirit. Just call us citrus whisperers.
How we made it
The rescued yuzu husks go into high-proof spirit for a short maceration to pull out the round, juicy citrus notes without dragging too much of the waxy stuff along for the ride. That infusion is then distilled, while even more yuzu sits up in the vapour path with jasmine tea and a handful of other botanicals to capture the brighter, zestier aromatics as it runs.
We bring it all together with a bittering extract of gentian and cinchona bark, then dial in the balance with a little sugar and acid. The oils from the Yuzu pulls in a soft natural haze that carries the flavour without weighing it down, before a short rest and careful rack leaves us with just the clean, expressive middle. Bright, structured and built for a spritz.

Yuzu'd Up Spritz
- 60ml All Yuzu'd Up Aperitivo
- 90ml Prosecco
- 30ml Soda Water
Add the three ingredients to an empty wine glass, top with cubed ice and garnish with a slice of lemon. (or yuzu!)
