We rescued spent yuzu husks from our friends at Frisk Small Bar - left overs from their cocktail creations - and gave them new life in this bright, aromatic gin. Crafted in collaboration with Frisk, and using fruit grown at WA Yuzu Farm in Donnybrook, it’s a zesty celebration of yuzu and second chances. Designed as the ultimate gin for a Corpse Reviver #2, it strikes the perfect balance of vibrant citrus, herbaceous depth, and a whisper of native anise myrtle.

The Hero Ingredient

Yuzu is a wild and wonderfully aromatic citrus, originally from Japan, with a punchy, tangy flavour somewhere between mandarin and lemon. The fruit in this gin was grown locally at WA Yuzu Farm in Donnybrook. A favourite in kitchens and bars for good reason - once you’ve tried yuzu, regular citrus just doesn’t hit the same.

How we made it

Along with the spent yuzu husks from Frisk, we used a mix of high-quality botanicals and a grape-based spirit made from leftover Barossa Valley grape skins - seriously good stuff. The botanicals were suspended in the still so only the vapour passed through, capturing bright, fresh flavours without the bitter bits. We then slowly diluted the spirit, let it rest for a few weeks, and hand-bottled every drop.

We love a double shot of Yuzu Gin with 150ml of Capi dry tonic and a lemon wedge. Or, for something equal parts sweet and tart, try it in this classic cocktail. The gin was literally made for it...

Corpse Reviver #2

  • 20ml Yuzu Gin
  • 20ml Lillet Blanc
  • 20ml Triple Sec
  • 20ml Lemon Juice
  • Absinthe (for rinsing)

Add all ingredients except absinthe to a shaker tin with cubed ice, shake hard for 20 seconds, then strain into a chilled cocktail glass. Strain into a chilled cocktail glass either rinsed or sprayed with absinthe.
